Cast Iron Potatoes
I honestly can’t get enough of these. I love them, you’ll love them. These are the potatoes of your dreams. Trust me.
Lemon, dill, butter, love. (Double, triple, quadruple as needed)
Ingredients
2 medium potatoes
1 Tbsp butter
1 Tbsp oil
Juice of 1/2 lemon
Dill
What to do
Preheat oven to 375˚F.
Wash the potatoes and slice very thin using a mandolin (or knife if you don’t have one.) You want them to be VERY thin to cook properly.
In a small, oven-safe skillet, melt some butter and combine with oil. Heat until melted.
Brush the sides of the skillet with the butter mixture and pour off the extra into a bowl. Turn off the heat.
Layer the sliced potatoes into the buttered skillet. (Careful, the skillet will be hot.)
Pour the extra butter on top and brush to coat evenly. Top with salt.
Cook for 50 minutes. When it’s done, sprinkle the lemon juice and the dill on top. Enjoy!
