Lamb Steak Tacos with Herby Salsa verde

Fruit salad all summer please! Just get your favorite fruit (this has nectarines, all kinds of berries, mango, and pomegranate). Add some honey, lime, basil, and walnuts. Mix and enjoy! Eat it just like this or add it to some arugula, grilled chicken, and feta!


Ingredients

For the steak:

  • 2 lamb steaks

  • salt

  • 1/2 tbsp cooking oil

For the salsa:

  • 1 small onion, diced

  • 1/2 cup fresh Cilantro

  • 2 cloves Garlic, minced

  • Lemon juice, to taste

  • 1/4 cup fresh Mint

  • salt

  • 2 Green chilies, deseeded if you like less spice

  • 1/4-1/2 cup Olive oil

To serve:

  • fresh tortillas

  • pickled white onions and red chillis

  • fresh cilantro

  • green onions, thinly sliced

  • cilantro lemon greek yogurt (or sour cream)


What to do

  1. Cook the lamb steaks on the stove to your liking. (Medium Rare is best!) Let rest while making the salsa.

  2. To make the salsa, add all of the fresh ingredients to a food processor and blend. Add oil slowly until it becomes a spoonable consistency. Adjust seasoning as necessary.

  3. To assemble, slice the steak thinly then add it to the tortillas. Add your toppings and spoon on some of the salsa. Enjoy!
