Sweet Roasted Carrots with Dill

We all love a roasted vegetable (hopefully), and these roasted carrots add a bit of sweetness and freshness that will have you hearing “YUM” after every bite.


Ingredients

  • 1 bunch carrots, peeled

  • 1 tbsp neutral cooking oil

  • 1 tbsp brown sugar

  • 1 tsp garlic powder

  • 1 bunch dill, chopped

  • Salt, to taste


What to do

  1. Preheat your oven to 200°C / 400°F

  2. Peel your carrots and prep the dill.

  3. In a large mixing bowl, mix all the spices, the oil, and half of the dill. Add the carrots and mix.

  4. Add to a sheet pan (large enough that the carrots do not touch) and roast for 25-30 minutes. The carrots will be softened.

  5. Remove from the tray, add to a serving plate, and top with the extra dill.

  6. Serve and enjoy!
